Chef Appreciation Club
As we slowly start to return to some level of ’the old norm’ thinly masked as the ‘new norm’, we couldn’t help but start planning our re-entry into the restaurant scene.
With one venue at the top of our list, and one Chef in mind to socially distance with, we booked our first mid-COVID meal at Braddon Merchant.
East facing, bathed in morning sunlight, and located right here at Midnight Hotel, Braddon Merchant is a bright, modern deli-style eatery with a smart European feel. The restaurant is known for its simple food, done exceptionally well, with each plate served featuring only ingredients that add real purpose to the dish.
Securing our booking, with no intention of 'no showing' (thank you very much), we settle in with nine strangers, who we could possibly become distant friends with after the evening. Everything is possible in a pandemic...
The Executive Chef, Andrew Morrow, is a relatively new guy to town and taking on Canberra’s food scene, one tigelle at a time.
Having returned to Australia to lead the Braddon Merchant team after an 11 year residency at Emirates Palace in the UAE, where almost every single ingredient is imported, Andrew relished the opportunity to meet his suppliers and producers in person, and foster good, honest friendships with them.
Determined to execute the Braddon Merchant promise of locality and seasonality right from the beginning, Andrew was near obsessive when it came to selecting these friendships.
The result was an impressive and diverse lineup of suppliers, including the likes of Bum Nuts Eggs near Gundaroo, Li Sun Mushrooms in Mittagong, Narooma Direct Seafood, and Moonlight Flat Oysters. He took ocean boat trips, foraged in disused railway tunnels and shook more hands than acceptable practice these days to build his supplier network.
Not deterred by a bushfire reaching epidemic proportions, followed by a virus of pandemic proportions, Andrew leads his team with clear direction and passion.
The past few months have impacted everyone and every business differently, with some restaurants mastering the art of takeaway and others required to hibernate, one thing that has remained as stable as ever is the passion shared by Andrew and the Braddon Merchant team for good, honest food and their unwavering love for creating memorable experiences for their guests.
Now open from 7am daily, with dine-in back on the menu, the next chapter of the Braddon Merchant story has officially begun.
